It's supper time!






































It's almost time.

The potatoes are on the stove boiling. They're going to go to a mash event here shortly. Is there such a thing?

The meatballs (mine are minus the peppers and the pineapple) are in the oven, rolling around in their sauce, soaking up all the succulence.

I enjoy cooking lots of different things but beyond a shadow of a doubt,  my familiy's favorite meal is mashed potatoes, meat and a simple vegetable. Tonight the veggie du jour is a mix of peas and corn.  I could make a spinach salad as I have spinach in the fridge. I also have brussel sprouts that I could toss with olive oil, salt and pepper and roast them in the oven. Nah, not tonight. Tonight I'm giving them exactly what they want.

Will got home from school and said he felt like cooking.

"How 'bout baking?" I replied.

"Sure."

Here's the magic filling up my house with glorious smells as I sit and type.

CHUNKY CHOCOLATE CHIP PEANUT BUTTER COOKIES
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 egg
1 teaspoon vanilla extract
2 cups (12 ounce package) Semi-Sweet chocolate morsels

Beat butter, granulated sugar, brown sugar and peanut butter in large bowl until creamy. Beat in egg and vanilla extract. Add in flour, baking soda, salt and cinnamon. Stir in morsels. Drop dough by rounded tablespoon onto ungreased baking sheets.
Bake in preheated 375 degree oven for 7 to 19 minutes or until edges are set but centers are still soft.
Makes about 3 dozen cookies that won't last long.

That's today. Rainy, dreary and cold outside.

Warm, delicious and succulent inside.

  1. Alright Will!!! Those cookies look and sound fabulous. Oh, the comfort food you had for supper tonight sure must have been yummy and has my mouth watering!
